Lambs mature at 1 years of age (4 seasons). Sheep have an average lifespan of 12.5 years (50 seasons), or minimum life span of 10 years (40 seasons). This is independent of the number of days per season a player sets. Adult female sheep have a 15% chance times the number of rams available in the fold, per season, to produce a lamb.

You can stay awake for 3 days and then it forces you to sleep for season changes. I dont know about newest update, but previously i could still stay awake all night doing mostly craftinf, except for when the season changes. You can't interact with anything in the pre-existing villages (other than the NPCs). When you build your own village, you can sleep and cook in your worker's houses, they don't mind.
